Hotaru Ika Pasta

Ingredients (~2 people)

  • 150g Hotaru Ika

  • 150g Dried pasa

  • 4 sliced garlic

  • 2 tbso olive oil

  • 2 tbsp miso

  • 2 tbsp shiro dashi

  • 1/2 cup white wine

  • Soy sauce to taste

  • Pepper

  • Chopped green onions for garnish (optional)

  • Shiso leaves for garnish (optional)

  • Bonito flakes for garnish (optional)

Blanch quickly!

1. Get water boiling and quickly boil the squid for 45 seconds. Take the squid out from the water and add your pasta.

2. Mix mirin, shiro dashi, and soy sauce (to taste) into a small bowl. You will be gunning for a slightly salt thick mixture.

3. In a hot pan, add garlic and olive oil. Cook the mixture for 1 minute or until the garlic starts to brown slightly.

4. Add the mixture in #2 and then deglaze with white wine. Do not stir the mixture until the alcohol is fully evaporated. If some parts look like it is about to burn, move around your pan.

5. Once pasta is 2 minutes to aldente, add both the squid and pasta.

6. Cook until aldente. Garnish with bonito flakes, green onions or shiso leaves.

7. Serve!
