Sashimi Crudo

Ingredients

  • 8 clementines squeezed

  • 1 1/2 tbps of olive oil

  • 5 tsp lemon juice

  • 5 tsp ponshabu

  • 1 clove minced garlic

  • 2 minced Thai chili

  • 100g raw yellow tail

  • 10g salmon eggs

  • Microgreens for garnish

  • Dill for garnish

  • Habanero for garnish

  • Fresno for garnish

  • Oranges for garnish

Steps

  1. Mix all ingredients that are not fish related into a bowl. Increase or decrease portion according to taste.

  2. Place Hamachi into the mixture.

  3. Garnish dish and serve!
