Grapefruit & Orange Salad

Ingredients (4 servings)

  • 1/2 grapefruit

  • 4 tangerines

  • 1/2 cup raw peanuts

  • 7 leaves of kaffir lime

  • 1/8 cup of shredded coconut

  • 1/8 cup of dried shrimp

  • 2 red Thai chili

  • Salt to taste

  • 1 tsp of vegetable oil

Steps

  1. In a small pot at med-high heat, stir fry raw peanuts in oil. Add a bit of salt to taste. This will make the peanut crispy and crunchy for the salad! If you are adventurous, go ahead and crush them as well! But as we all know, busy people don’t have time.

  2. Put the cooked peanut in a bowl and in the same pot cook the dried shrimp it is still raw. Make them crispy as well but be careful! The shrimps tend to burn very easily.

  3. Peel and cut up tangerines and grapefruit in small chunks of equal size. Keep the juice that leaks out. This is a great mixture for the dish!

  4. Slice kaffir lime leaves and chop Thai chili.

  5. Add every mixture into the bowl and stir thoroughly. Top with shredded coconut and design the dish you want to serve.

Styling

This dish came to me on one of those nights I really miss Thailand. I thought to myself, how could I bring home to me? I remember that the pavements at my house were more like stones on the ground so I put the mixture with peanuts in first. Then I remembered that we grew amazing fruit trees in the garden! And that was how I really thought about putting the fruits on top rather than mixing it on the first time.

The salad is like a garden in my home.
