Mixed Mushroom Truffle Oil Pasta

Ingredients

  • 1 cup of Shiitake mushrooms

  • 1/2 cup of cremini mushrooms

  • 1 tbps of butter (not soft)

  • 1 tbsp of olive oil

  • 1 cup of parmesarn cheese

  • 1 tsp of truffle oil

  • 1/4 cup of fresh thyme

  • 1/2 of heavy cream

  • 1/3 cup of pasta water

  • 7 cloves of garlic

  • 2 cups of fusilli (1 cup per person)

Steps

  1. Boil water for pasta. The recipe should be done within 10-12 minutes if the water is boiling.

  2. In a pan add olive oil and garlic. Stir until garlic is almost crispy, don't burn it! Mean while add butter, then add mushrooms and cooked until all water disappear and it looks caramelized.

  3. Put 1-2 pinches of salt into the pan.

  4. Once pasta is almost aldente, add pasta into pan and stir! Add cream and fresh chopped thyme. This is the thyme (haha) to add salt to taste!! After a minute add truffle oil and cheese. Stir until the cheese melts and serve!!!

Story Time

This recipe was inspired by Julie’s kitchen instagram story. I have always loved mushroom pasta and made many variations of the dish. This recipe is a culmination of my experiences! I try to distill recipe to its core ingredients to really highlight its taste. Personally, I think this dish could go through experiments of figuring out which mushroom texture worked best. Right now it is just stir fried mushrooms but I know crispy mushrooms are even better for this dish! I hope to experiment more so that home cooking can become interesting and worthwhile to try.

I believe that good food should be accessible to everyone. One of those ways to get access is cooking on your own. Although cooking is somewhat a daunting task for those who are beginners… with practice you will become better.
